Braised Kale With Bacon

Ingredients

  • 2 lbs darkest green kale, stemmed and torn into large pieces
  • 1/4 cup chicken stock
  • 1/4 cup dry white wine
  • 4 slices bacon, cut into 1/4-inch dice, fried until almost crisp, and drained on paper towels
  • Salt and freshly ground black pepper to taste

Cooking Instructions

Pile the kale into a large kettle. Add the stock and wine. Cover and simmer over low heat for 5 minutes. Stir in the bacon. Simmer, tossing the kale with a fork from time to time, until it is tender, 5 to 6 more minutes. Season well with salt and pepper. Toss well with a fork to coat with the sauce remaining in the kettle, and serve very hot.
