Chop: Giblets
Melt: 1/4 cup butter
Add and saute about 2 minutes: (2 tablespoons or more chopped onion)
and the chopped giblets. Combine these ingredients with: 4 cups crustless day-old or slightly toasted, diced white, whole wheat or corn bread crumbs
1/4 cup chopped parsley
1/4 to 1 cup chopped celery
1 teaspoon crushed dried tarragon or basil
3/4 teaspoon salt
1/2 teaspoon paprika
1/8 teaspoon nutmeg
Milk, stock or melted butter to moisten the dressing very lightly
(2 or 3 eggs)
You may add: 1-1/2 cups nutmeats: Brazil, pine, pecan or walnut
and one of the following: 1 cup browned sausage meat
1 cup or more sliced mushrooms, sauteed with onion
1 cup chopped or whole drained oysters
1 cup chopped or whole soft-shell clams
1 cup cooked chopped shrimp
