Broccoli-Cheese Baked Potatoes

Ingredients

  • 2 large baking potatoes
  • 1 tbsp margarine or butter
  • 6 oz (2 cups) broccoli florets
  • 4 oz (1 cup) coarsely chopped red bell pepper
  • 1 clove garlic, minced or 1/2 tsp bottled minced garlic
  • 1/4 tsp salt (optional)
  • 1/4 tsp freshly ground black pepper
  • 1/2 cup shredded low-fat cheddar cheese
  • 1/4 cup fat-free sour cream or fat-free plain yogurt
  • 2 tbsp chopped chives or basil leaves for garnish (optional)

Cooking Instructions

Scrub potatoes and prick in several places with the tip of a sharp knife. Place on a paper towel in the microwave oven and cook at HIGH power for 6 minutes. Turn over and continue to cook at HIGH power for 7 to 8 minutes or until tender.

While potatoes are cooking, melt margarine in a large nonstick skillet over medium heat. Add broccoli, red pepper, and garlic. Cook for 3 minutes, stirring occasionally. Reduce heat, cover, and steam for 6 to 7 minutes or until vegetables are tender.

Split hot potatoes with a fork and squeeze ends inward to fluff. Sprinkle with salt, if desired, and pepper. Top with vegetables and cheese. Serve with sour cream or yogurt and, if desired, chives.
