Broccoli Rounds With Onions And Mushro..

Ingredients

  • Salt and freshly ground black pepper to taste
  • 2 tsp chopped fresh thyme
  • 4 or 5 cups thinly sliced rounds of peeled broccoli stems
  • 1 small onion, thinly sliced
  • 2 tbsp butter or pure olive oil
  • 1 tbsp fresh lemon juice
  • 1 clove garlic, minced
  • 1/4 lb white mushrooms, stems trimmed, sliced

Cooking Instructions

Melt the butter or heat the oil in a large heavy skillet over medium heat. Cook the onion, stirring occasionally, for about 5 minutes. Do not brown. Stir in the broccoli, mushrooms, and garlic. Cook, still over medium heat, stirring from time to time, until tender, about 6 minutes.

Stir in the lemon juice and season well with salt, pepper, and thyme. Cook, tossing, 1 minute and serve very hot.
