Broccoli with Spicy Tahini

Ingredients

  • 1 pound broccoli, stem ends trimmed and stalks peeled
  • 1/3 cup tahini
  • 1 tablespoon harissa, or to taste (see Ingredient note)
  • 1 tablespoon lemon juice
  • 1/4 teaspoon salt

Cooking Instructions

1. Bring 1 inch of water to a steady boil in a large saucepan. Cut broccoli lengthwise so the florets are 1 to 2 inches wide and are attached to the long stalks. Place broccoli in a steamer basket, cover and cook over the boiling water until just tender, 3 to 6 minutes. Reserve 1/3 cup of the broccoli-steaming liquid.

2. Place tahini in a blender; with the motor running, gradually add the reserved cooking liquid. Add harissa, lemon juice and salt and blend until smooth, scraping down the sides as necessary. Serve the broccoli with the sauce.

Ingredient note

Harissa: A Tunisian chile paste. Harissa in a tube will be much hotter than that in a jar. You can substitute Chinese or Thai chili-garlic sauce for it.

    Oddly, there is a sympathy of tastes between sesame and broccoli. The pale pink sauce and the green broccoli make an attractive first course. The amount of harissa to be used will vary with its spiciness and the tastes of the guests. This sauce can easily be doubled, and leftovers are great with falafel, veggie sandwiches, steamed fish or chickpeas.
