Broiled Asian Salmon Cakes

Ingredients

  • 4 ounces Italian bread, broken in chunks (5 cups)
  • 1 can (14 ounces) red or pink salmon, drained and flaked
  • 1 large egg
  • 2 tablespoons minced scallions
  • 3 tablespoons bottled white horseradish, not drained
  • 2 tablespoons shredded fresh ginger
  • 1/4 cup minced red bell pepper
  • 2 teaspoons butter or margarine, melted
  • SCALLION SAUCE
  • 1/4 cup low-sodium soy sauce
  • 2 tablespoons fresh lemon juice
  • 2 tablespoons minced scallions

Cooking Instructions

Heat broiler. Lightly spray broiler-pan rack with nonstick cooking spray.

Process bread chunks in food processor to make fine crumbs (you should have 3 cups). Remove 1 cup to a medium bowl and add salmon, egg and scallions. Stir until blended.

Form into 4 patties and place on prepared rack.

Add horseradish and ginger to bread crumbs in food processor. Pulse to mix, then stir in bell pepper. Mound 1⁄2 cup crumb mixture on each patty, pressing down gently. Drizzle with butter.

Broil 4 to 5 inches from heat source 10 to 12 minutes, without turning, until crumb topping is well browned.

Meanwhile mix Sauce ingredients in a small bowl. Serve with salmon cakes.
