Broiled New Zealand Mussels with Cumin

Ingredients

  • freshly ground black pepper
  • 12 New Zealand mussels or 24 small mussels on the half-shell
  • chopped fresh parsley, to garnish
  • 1 garlic clove, crushed
  • 3 tbsp fresh cilantro
  • 3 tbsp fresh parsley
  • 3 tbsp brown bread crumbs
  • 2 tbsp unsalted butter, softened
  • pinch of ground cumin

Cooking Instructions

1. Chop the herbs finely.

2. Beat the garlic, herbs, cumin and butter together with a wooden spoon.

3. Stir in the bread crumbs and freshly ground black pepper.

4. Spoon a little of the mixture onto each mussel and broil for 2 minutes. Serve with chopped fresh parsley.
