Broiled Swordfish Steaks

Ingredients

  • 1 or 2 swordfish steaks 1-1/2 inches thick
  • 1/4 cup soy sauce
  • 2 garlic cloves, finely chopped
  • 1/4 cup olive oil
  • 1 tbsp finely chopped fresh ginger
  • 1 tbsp grated orange peel
  • 1/4 cup sherry or Madeira

Cooking Instructions

Combine the marinade ingredients and marinate the fish 1 hour, turning several times. Place the steaks on an oiled rack in a broiling pan and broil about 4 inches from the heat unit for a total of about 15 minutes. Turn once during the cooking and brush well with the marinade. Serve on a hot platter with mounds of rice. Pour the remaining marinade over the steaks.
