Broiled Vegetables with Bell-Pepper Sauce

Ingredients

  • 1 large Spanish onion, cut in 12 long wedges, each speared with a toothpick
  • mediu beets and sweet potatoes, cut in 1/4-in.-thick rounds
  • 1 each red and yellow bell pep­per, halved and cored
  • 4 portobello mushroom caps
  • Nonstick olive oil spray
  • 3/4 tsp salt
  • 1/2 tsp pepper
  • 1 batch Yogurt Cheese (recipe below)
  • 1 Tbsp fresh lemon juice
  • 1 tsp minced garlic
  • Yogurt Cheese
  • This spread resembles cream cheese but has less fat and cholesterol.
  • mediu strainer over a bowl; line strainer with 2 layers of paper towel or a paper coffee filter. Add 11/2 cups plain lowfat yogurt, cover with plastic wrap and refrigerate at least 4 hours. Scrape cheese into a bowl and refrigerate until ready to use.

Cooking Instructions

Remove broiler pan with rack. Heat broiler.

Mix vegetables in a large bowl; coat with nonstick spray and sprinkle with 1/2 tsp each salt and pepper. Spread 1/3 in a single layer on broiler-pan rack.

Broil 6 minutes per side or until tender and char­red. Remove to a platter. Repeat with remaining vegetables.

Wrap hot red bell pepper in paper towels. When cool, remove skin; put red pepper in a food processor.

Add Yogurt Cheese, lemon juice, garlic and remaining 1/4 tsp salt. Purée until smooth; serve on vegetables.

If prepared as a side dish, recipe yields six servings.
