Cajun Brisket

Ingredients

  • 6 cups mesquite or hickery chips
  • 1 trimmed brisket
  • 2 tbsp dry rub
  • 1 cup drippings from brisket
  • 1 1/4 cup ketchup
  • 1/2 cup worcheshire sauce
  • 4 tbsp brown sugar
  • 2 tbsp chopped onions
  • 1/4 cup water
  • 1 tbsp red pepper
  • juice of 2 lemons

Cooking Instructions

Mix 1/4 cup salt 1 1/2 tsp black pepper and 1 1/2 tsp red pepper to make dry rub. Apply dry rub to all sides of the brisket

soak wood chips for 1-2 hours.

Place brisket directly over the hot coals for 5 minutes on each side

Move brisket and place soaked wood chips on top of hot coals and return brisket to grill as far away from the coals as possible. Cover pit and smoke brisket for 2 hours

Preheat oven to 250 degrees. Wrap brisket tightly in heavy aluminum foil. Place in pan and bake for 6 hours

Mix drippings ketchup, worcheshire sauce, brown sugar, onion, water, red pepper, and lemon juice in medium size sauce pan to make barbque sauce. Simmer on low heat for 30-45 minutes

Remove brisket from oven and foil. Let cool for 30 minutes. Slice across the grain for serving.
