CAJUN-RICE DRESSING

Ingredients

  • 2 lg rolls hot breakfast sausage
  • 1 large red bell pepper
  • 1 med yellow onion
  • 5 bunches green onions
  • 2 cups cooked rice in chicken broth
  • 2 boxes stovetop stuffing for pork
  • 3 cans chicken broth
  • 2 cans cream of chicken soup
  • 1 large bunch of celery with tops
  • 2 Tbspn white ground pepper
  • 2 Tspns black pepper & crushed red pepper
  • 2 Tspns habanero pepper
  • 2 Tspns salt
  • 1 Tspn poultry seasoning
  • 2 cups milk

Cooking Instructions

cook sausage until done and drain well. Cook rice according to directions - chicken broth instead of water when you prepare the rice. set aside. In skillet, put a stick of real butter and saute' all your vegetables until tender. Combine with your sausage and rice in a large roasting pan. Stir well.

In large bowl, combine 2 cans of cream of chicken soup, 2 cups of milk and stir well. Add to meat/rice mixture. Add in all peppers and salt. Stir well. Pour in remaining cans of chicken broth. Add 2 boxes stove top stuffing (uncooked). Stir well. (you can add more pepper if you like it even spicier) Cover and bake @ 325 degrees for 1 hour and 30 minutes.
