Campbell's Fiesta Rice

Ingredients

  • 1 Tbs vegetable oil
  • 1 sm green pepper
  • 1 sm onion chopped (about 1/2 cup)
  • 3 c V8 vegetable juice
  • 1/4 tsp garlic powder
  • 1 c uncooked regular long grain rice
  • 1/2 c shredded Monterey Jack cheese (2oz)

Cooking Instructions

In medium saucepan over med. heat, heat oil. Add pepper and onion and cook until tender-crisp. Add V8 juice, garlic powder and rice. Heat to a boil. Reduce heat to low. Cover and cook 20 min or until rice is done & most of liquid is absorbed. Stir in cheese.
