Peel the boiled sweet potatoes. Butter a casserole and put a layer of the quartered potatoes in the bottom. Season to taste with salt and pepper, sprinkle with brown sugar and dot liberally with butter. Repeat these layers until all the potatoes are used. Bake in a 375F oven until hot through, brown and bubbly.
