Ingredients

  • 1 jalapeño chile (or to taste), seeded and minced
  • 2 tbsp minced fresh oregano or 2 tsp dried oregano
  • 1 tsp sea salt
  • 1 tsp freshly ground black pepper
  • 3/4 tsp cumin
  • 1/2 tsp coriander Scallion brushes for garnish
  • 4 sun-dried tomatoes, drained and chopped
  • 3 ripe tomatoes, skinned and chopped
  • 3 cups fresh corn kernels or 2 cans (12 oz each) niblet corn, drained
  • 3/4 cup dark rum or apple juice
  • 1 medium-sized sweet yellow onion, chopped
  • 1/2 small red or green bell pepper, chopped

Cooking Instructions

1. In a medium-sized pot, combine all of the ingredients. Bring to a boil, then reduce the heat and cover. Simmer for 10 minutes, stirring from time to time.

2. Transfer the corn mixture to a serving dish and garnish with scallion brushes. Serve immediately.
