1. Place all the marinade ingredients in a large glass jar with a lid and shake well. Place the mangoes in a blender or food processor and puree to a coarse consistency; some tiny chunks of mango should remain. Mix the mango puree with the marinade in a glass or ceramic dish just large enough to hold the fish.
2. Place the fish in the marinade and turn several times to coat. Cover the fish with the marinade and place in the refrigerator for 45 minutes. Do not marinate longer or the fish will begin to "cook" in the acidic ingredients of the marinade.
3. If grilling, light a hardwood fire 45 minutes before serving. If broiling, preheat the broiler 15 minutes before cooking the fish.
4. Remove the fish from the marinade and place the marinade in a small saucepan. Gently warm over low heat. (If sauteing fish, add the fish along with the marinade to a large skillet and cook until done, about 10 minutes.)
5. Place the fish over white coals or under the broiler. Cook approximately 5 minutes on each side, or until the fish is opaque throughout and flakes easily with a fork.
6. Place the fish on plates or a serving platter. Spoon a bit of the warmed marinade over the fish and serve immediately.
