Ingredients

  • 2 tbs Annatto oil of more if needed
  • 2 ounces Ham finely diced
  • 1 3 - pound Chicken cut into pieces
  • 1/3 cup Recaito
  • 1 tbs White wine vinegar
  • 1 tsp Capers
  • 12 Green Spanish Olives
  • 2 tsp Whole dry oregano
  • 2 tsp ground Cumin
  • Salt & Pepper
  • 1 Salted Pig foot & Tail
  • 8 oz Spanish Style Tomatos Sauces
  • 2 meduim Potatoes cut in 1/2-inch cubes dont peel
  • 1 cup Frozen Sweet Peas & Carrots
  • 2 Bay Leaves
  • 2 cup Beer or dry white wine
  • 1 cup water

Cooking Instructions

Heat oil in a pot over medium heat. Add the ham and brown. Remove ham add chicken seasoned with salt and pepper and brown. Remove chicken add recaito bay leaves vinegar cumin salted pork oregano olives and capers. Cook for 3 minutes. If have to add more annatto oil. Stir in tomato sauce potatoes ham water beer & chicken coat everything well. Bring to a rapid on high then lower heat to a slow boil. Do not cover. At the last 5 minutes add peas & carrots & place top on.
