Heat oil in a pot over medium heat. Add the ham and brown. Remove ham add chicken seasoned with salt and pepper and brown. Remove chicken add recaito bay leavs vinegar cumin salted pork oregano olives and capers. Cook for 3 minutes. If have to add more annatto oil. Stir in tomato sauce potatoes ham water beer & chicken coat everything well. Bring to a rapid on high then lower heat to a slow boil. Do not cook with cover. The last 5 minutes and peas carrots & place top on.
Serve over white rice, tostones & Puerto Rican mojo. Look up "Recaito" & "Mojo Puerto Rican" if need help. I have a recipe for both.
