Preheat oven to 350 degrees.
In a saucepan cook squash and onion in 2 c. boiling water and 1/2 t. salt, uncovered for 5 min., stir once.
Drain.
In a bowl combine soup, sour cream, and carrots.
Fold in half the squash mixture.
Combine stuffing mix and butter or margerine.
Sprinkle 2/3 of the stuffing mix in a 12"x7"x2" baking dish.
Spoon vegetable mixture on top.
Sprinkle remaining stuffing around the edge of the dish.
Bake, uncovered, @ 350 for 30-35 min.
A colorful side dish. Serve along with your roast or brisket! A long-time favorite.
