
PREHEAT oven to 400°F.
DIVIDE cauliflower into florets. Heat water in saucepan to a boil. Add cauliflower and cook 6 min. or until tender-crisp. Drain cauliflower and rinse with cold water. Set aside.
HEAT 1/2 tbsp. butter in saucepan over medium heat. Add bread crumbs and stir to coat. Cook and stir until crumbs are golden brown. Set aside.
HEAT remaining butter in saucepan over medium heat. Add flour and cook 1 min., stirring constantly. Add milk, broth, bay leaf and garlic. Heat to a boil, stirring constantly. Reduce heat to low and cook 8 to 10 min. stirring occasionally. Season with pepper. Remove bay leaf and garlic. Keep warm.
CUT cauliflower florets into halves or quarters and arrange in one layer in greased shallow baking dish. Season with pepper. Pour broth mixture over cauliflower. Sprinkle with prosciutto. Top with cheese and bread crumbs.
BAKE 30 min. or until browned. Let stand 15 min. before serving.
