Cut up cauliflower and boil in water occasionally adding salt and pepper until tender.
After tender, drain most of the water and add butter (I squeeze butter and stir around).
Let the cauliflower get soft enough to mash, adding more butter if needed and serve warm.
This is so easy! If you love mashed potatoes, you'll love this. It has the same texture as them and if you're on the South Beach Diet, it's on the plan. So amazing!

Can't get the kids to eat veggies? - they'll LOVE this !! And, yes, we had lot's of it while on the SBD. Thanks for the reminder - off to the Farmers Market to get some now ! |
