This beverage, specifically a type of atole, is traditionally prepared with masa (corn tortilla dough) to thicken it. The following recipe instead uses masa harina (flour tortilla dough) or cornstarch. For variations, include other flavorings and spices: a tablespoon of grated orange peel; a teaspoon of crushed aniseed or almond extract; or a pinch of ground nutmeg or 2 to 3 whole cloves. INGREDIENTS 1 cup cold water 1/4 cup masa harina or 2 tablespoons cornstarch 2 oz. grated Mexican chocolate 1/4 cup brown or white sugar 2 cinnamon sticks, broken in half 1 tsp. vanilla extract 1 cup whole milk Cinnamon sticks for garnish PREPARATION In medium-size saucepan over medium heat mix together water and masa harina or cornstarch. Add chocolate, brown or white sugar, and cinnamon sticks and stir continuously until mixture has thickened. Add vanilla extract.
