Cheese Straws

Ingredients

  • 2 egg yolks beaten with water
  • caraway seeds
  • coarsely crushed pepper
  • 1 cup grated Asiago
  • 10 oz frozen puff pastry

Cooking Instructions

Preheat the oven to 425 F and prepare the cheese straws as described in the picture sequence below.

Making cheese straws:

Roll out the puff pastry to 12 x 12 inches and brush with egg yolk. Sprinkle cheese over one half of the pastry and season with pepper. Fold over the pastry to cover the cheese.

Roll over the pastry several times with the rolling pin in order to combine the cheese with the pastry. Using a pastry wheel and a ruler, cut into 1/2-inch-wide strips.

Holding the strips at either end, carefully corkscrew them by twisting each end in the opposite direction. Place on a baking sheet that has been moistened with water.

Glaze the cheese straws with the remaining egg yolk and sprinkle with caraway seeds. Bake for about 10 minutes, until golden brown.
