Ingredients

  • 2 Cups Manchego or hard white cheese like Parmesan
  • 1 Can Artichoke Hearts
  • 3/4 Cup Frozen (then defrosted) Spinach
  • 1 Cup Mayonaisse (Light can be substituted for less fat)
  • 2 Tbls Minced sweet onion
  • 1 Tbls Dried Oregano
  • 10-12 Sundried Tomatoes (Diced)
  • 2 Tbls Minced Garlic
  • 1/2 Cup Sour Cream (Light can be Substituted)

Cooking Instructions

Grate cheese and chop artichokes and mix together all ingredients until well blended. Transfer to an 8X8 or 9X9 glass or ceramic baking dish and cook in preheated 350 degree oven approx. 50 minutes or until very lightly golden brown/bubbly on top.

Your guests or your family will LOVE this recipe! I always have the ingredients on hand and you can make it the day before and refrigerate it before you're ready to bake it for less than an hour. It is truly yummy!! :)
