Stack tortillas and cut into 1/2" strips. In 12" skillet over medium-high heat, heat 1 tbsp. oil. Add half of tortilla strips and fry until golden brown. Remove and drain on paper towels. Repeat with remaining oil and tortilla strips.
Preheat oven to 400°F. In same skillet over medium-high heat, cook ground beef until browned. Add verde cooking sauce.
In 2-qt. shallow baking dish, layer half of fried tortilla strips. Top with meat mixture, half of cheese, tomatoes, remaining fried tortilla strips and remaining cheese. Bake 15 min. or until hot.
TIP: *Or use 4 cups coarsely broken tortilla chips and omit corn tortillas and oil.
