Cheesy Mashed Potatoes

Ingredients

  • 2 pounds baking potatoes (4 large), peeled and cut in 1-inch chunks
  • 1 cup hot milk
  • 2 tablespoons butter or margarine, cut up
  • 4 ounces sliced American cheese, stacked and cut in 1/2-inch squares (3/4 cup)
  • 3/4 cup shredded extra-sharp Cheddar cheese
  • 1/2 teaspoon freshly ground black pepper
  • 1/4 teaspoon salt
  • pinch ground red pepper (cayenne)

Cooking Instructions

Cook potatoes in water to cover 13 to 15 minutes until very tender. Drain in a colander.

Return potatoes to pot and stir over medium heat 1 to 2 minutes until dry and floury.

Mash, adding half the milk and the butter. Add cheeses, then remaining milk and seasonings and beat with a wooden spoon until cheeses have melted and potatoes are creamy.
