Peel and cut potatoes into 1/4 inch strips. Combine 1/4 cup butter, onion, salt, pepper, sour cream and soup in bowl. Lightly butter the crock pot and place potatoes inside. Mix in the 2 cups cheddar with potaoes. Pour sour cream mixture into potatoes and mix well. Cover top of potatoe mixture with the stuffing mix and drizzle with the 3 tbsp. butter. Cover and cook on low for 8-10 hours or on high for 5-6 hours.
Time Savers Cook potatoes in boiling water for 30 min. This decreases the cook time to 6-8 hours on low and 2 hours on high. Substitute 32 oz. frozen hash browns for potatoes. Low= 4-6 hrs. High= 2 hours.
