Cheesy Squash Casserol

Ingredients

  • 2 cans squash drained
  • 16 slices Velveeta cheese
  • 1 tsp oregano
  • 1 can cream of mushroom soup
  • 1 lb ground beef
  • 1 small onion chopped

Cooking Instructions

Brown ground beef with chopped onion drain.

Combine ground beef with 2 cans squash (I use Margaret Holmes brand) oregano cream of mushroom soup and salt and pepper to taste.

In a 13x9 casserole dish pour in one half of squash mixture and top with 8 slices of Velveeta cheese. Cover with remaining squash mixture and top with remaining cheese slices.

Bake at 350 for approximately 20-25 minutes until bubbly.

Recipe Notes

If you want to make this more of a side dish, try omitting the ground beef and substituting 1/2 lb. chopped bacon for flavor! Can also top with crushed butter cracker crumbs!
