Ingredients

  • 4 garlic cloves, coarsely chopped
  • Salt
  • 2/3 cup finely chopped cilantro
  • 1/3 cup finely chopped parsley
  • 1-1/2 tsp sweet paprika
  • 1/2 tsp ground cumin
  • 1/8 tsp cayenne
  • 1/4 cup extra virgin olive oil
  • Juice of 2 large lemons or to taste

Cooking Instructions

Pound the garlic with 1 teaspoon salt in a mortar until smooth. Add the cilantro and parsley and lb a little more to bruise the leaves and release their flavor. Stir in the spices, olive oil, and lemon juice.
