Chicken & Cheese Roll-ups

Ingredients

  • 1-2 packs boneless/skinless Chicken breasts
  • 1 bag frozen vegetables
  • 3 cups instant white rice
  • 2 tbsp butter or margarine
  • seasonings & paprika
  • 1 can cream of chicken soup
  • 1 cup Milk
  • 1 pack cheddar cheese
  • 1 pack mozzarella cheese

Cooking Instructions

1) Take chicken out of packaging, rinse with water & towel dry.

2) Take meat tenderizer (mallot) and thin chicken out.

3) Take breasts and put one layer of cheese slices into center, fold both sides into center and roll & then 3 toothpicks to secure the rolls. Then, fry chicken until done.

4)Get out a large casserole dish and grease the bottom only.

5) Cook instant rice until done.

DO NOT LONG GRAIN RICE.

6) Cook frozen vegetables until done, mix in with rice and place on bottom of casserole dish.

7) Once the chicken is completely cooked, lay one layer on top of the rice mixure.

8) Mix cream soup with milk until very well blended and pour over the top of the casserole.

9) Once all is completed, you can re-heat the entire casserole in a 350 degree oven & serve when ready.
