Chicken and Dumpling Casserole

Ingredients

  • 1/2 cup onions, chopped
  • 1/2 cup celery, chopped
  • 2 cloves garlic, minced
  • 1/4 cup butter
  • 1/2 cup flour
  • 1 tsp sugar
  • 2 tsp basil, dried
  • 1/2 tsp pepper
  • 4 cups Chicken broth
  • 1 10 ounce package peas, frozen
  • 4 cups chicken, cooked and cubed or shredded
  • 3 cups buscuit mix, dry
  • 2 tsp basil, dried
  • 2/3 cups milk *

Cooking Instructions

In a large pan, saute onion, celery, & garlic in butter until tender. Add flour, sugar, salt, basil, pepper, and broth; bring to boil. Cook for 1 minute. Stir in chicken, peas; cool, pour mixture into gallon freezer bag.

Mix biscuit mix and basil, put in quart zip lock freezer bag and attach to main dish, to prepare at cooking time. Include instructions to 'add 2/3 cup milk'

To prepare: thaw. Pour chicken mixture into 9 x 13 baking dish. Mix dumplings by stirring 2/3 cups milk into biscuit mix with fork until moistened. Drop teaspoonfuls of dumpling mix over chicken mixture, bake casserole uncovered at 350' for 30 minutes. Then cover and bake for 10 minutes more, until dumplings are done.
