Chicken and Rice ala Provence

Ingredients

  • 6 large boneless skinless chicken breasts
  • 1 1/2 T Herbes De Provence
  • 1 1/2 cups brown rice
  • 3 1/4 cups chicken stock or broth
  • 1 clove minced garlic
  • 1 T fresh lemon zest
  • 1 1/2 T fresh chopped parsley
  • 1/2 t Salt and freshly ground black pepper
  • 3 T olive oil

Cooking Instructions

Cut chicken breasts in half crosswise and season with 1 T Herbes De Provence salt and pepper.

Heat a large pot (with a tight fitting lid) on medium high heat.

Add 2 T olive oil.

Place chicken in hot oil and just brown aprox 2 mins on each side. Chicken will not be cooked completely. Remove chicken and set aside.

Add 1 T olive oil to pot. Add rice garlic 1/2 T Herbes De Provence and mix to coat rice with oil and seasonings.

Add chicken stock or broth and place browned chicken on top of rice. Bring to a boil. Place tight fitting lid on pot and lower heat.

Simmer aprox 55 mins until rice is done.

Remove chicken from rice and set aside. Fluff rice and fold in fresh lemon zest and chopped fresh parsley. (save a little for garnish)

Remove rice to serving platter and place chicken pieces on top. Garnish with lemon zest and parsley.

Recipe Notes

I created this recipe when I prepared a meal for a new mom and her family. It was a hit! (I left out the garlic since she was nursing her newborn) Serve it with a green salad and vegie.

"Herbes De Provence" is several herbs combined & can be found already combined in the spice section.
