1. Brown chicken breasts in 4 tablespoons of the butter and the oil.
2. Add salt, pepper, and scallions and simmer for about 30 minutes.
3. Meanwhile, in a separate skillet melt remaining 4 tablespoons butter; add apples and cook for about 10 minutes.
4. When chicken is cooked through and tender, add apples and cream, and cook a few more minutes. Sprinkle with almonds. Serve with rice, if desired.
