Ingredients

  • 1 tbsp. vegetable oil
  • 4 skinless, boneless chicken breasts or 8 skinless, boneless chicken thighs
  • 1 3/4 cups Swanson® Chicken Broth (regular, Natural Goodness™ or Certified Organic)
  • 1 tsp. dried oregano leaves , crushed
  • 1/2 tsp. garlic powder
  • 1 can (14 oz.) whole peeled tomato , cut up
  • 1 small green pepper , cut into 2" long strips (about 1 cup)
  • 1 medium onion , cut into wedges
  • 2 1/2 cups uncooked medium shell-shaped pasta

Cooking Instructions

HEAT oil in medium skillet over medium-high heat. Add chicken and cook 10 minutes or until browned.

ADD broth, oregano, garlic powder, tomatoes, pepper and onion. Heat to a boil. Stir in pasta. Cover and cook over low heat 15 minutes or until pasta is done.

Chicken Cacciatore and Pasta

This was very similar to my Mothers recipe that she made many years ago. I was so excited to find the recipe as I had never written hers down. Very easy to put together. Our family loves mushroons so I added those and also added 1/2 cup of medium salsa for added zip. Delicious and easy. Who could ask for more?
