Chicken Casserole

Ingredients

  • 2 1/2 pds Frozen Shredded Potatoes (as for Hash Browns)
  • 1 pd French cut Frozen Green Beans (Birdseye)
  • 1 Red Bell Pepper Chopped
  • 1 Sweet Onion thinly sliced then chopped
  • 4 Tbsp Light Butter Chopped up into small pieces or shredded
  • 2 Tbsp Extra Virgin Olive Oil
  • 3 pds Bonelss Chicken cut into stips or chopped into chunks
  • 26 oz Campbell's Condensed Cream of Chicken Soup
  • 26 oz Milk Fat Free Milk or 1/2 & 1/2
  • Black Pepper (to Taste)
  • 1/4 Cup Croutons
  • 3 tsp Hidden Valley Fiesta Ranch Powdered Dip Mix

Cooking Instructions

Preheat your oven to 375 degrees.

Stir the 1st 6 ingredients together in a non-stick roasting pan

Layer the cut up boneless Chicken on top of your vegetable mixture. Sprinkle on some Black Pepper.

In a seperate bowl whisk the Cream of Chicken Soup and your choice of milk together. A heavier milk product like 1/2 and 1/2 will result in a creamier sauce. Using the Fat Free Milk will taste just as good but the sauce like your waistline will be a little thinner. Pour this mixture over the layer of Chicken in the Roasting Pan.

Add the Fiesta Ranch Dip Seasoning to the 1/4 Cup of Croutons and Crush together. (I used a food proscessor for this) Spinkle this mixture over the top of your casserole.

Bake uncovered for 35-45 minutes until Chicken is cooked through.

Mixture may be slightly "soupy" when you first pull it out of the oven but as it sits for a few minutes the potatoe mixture absorbs the liquid and it will look and taste creamy.

Recipe Notes

I always get compliments when I bring this to a covered dish supper at Church!! It is very tasty.

Quick & Easy Casserole

I am in the process of making a recipe notebook for my future daughter in law. (I have a notebook too) This sounds perfect for a professional wife to make after a long day of work! (OR my son can make it for her:):)

Great Dinner

This was excellent my boyfriend says its his new favorite. I used the cheese shoe string hash browns and it was great.

Great recipe

I tried this recipe, and tried to cut it in half-it was just too big for the two of us. Potatoes were creamy, and the chicken cooked perfectly.

Easy to Prepare

This was so easy to prepare. Reminded me of a Dump Cake recipe. I have it in the oven now and we're gonna have it for dinner tonight. It smells delicious. Thanks.
