Preheat your oven to 375 degrees.
Stir the 1st 6 ingredients together in a non-stick roasting pan
Layer the cut up boneless Chicken on top of your vegetable mixture. Sprinkle on some Black Pepper.
In a seperate bowl whisk the Cream of Chicken Soup and your choice of milk together. A heavier milk product like 1/2 and 1/2 will result in a creamier sauce. Using the Fat Free Milk will taste just as good but the sauce like your waistline will be a little thinner. Pour this mixture over the layer of Chicken in the Roasting Pan.
Add the Fiesta Ranch Dip Seasoning to the 1/4 Cup of Croutons and Crush together. (I used a food proscessor for this) Spinkle this mixture over the top of your casserole.
Bake uncovered for 35-45 minutes until Chicken is cooked through.
Mixture may be slightly "soupy" when you first pull it out of the oven but as it sits for a few minutes the potatoe mixture absorbs the liquid and it will look and taste creamy.
I always get compliments when I bring this to a covered dish supper at Church!! It is very tasty.
