Season chicken with Creole seasoning.
Heat oil in skillet. Add chicken and cook until browned.
Add soup, water, chiles and lime juice. Heat to a boil. Cook over low heat 5 min. or until done.
Stir in sour cream and heat through. Serve over rice.

I added some extra paprika and cayenne pepper for a little extra kick (I love spice). The sauce has a nice depth of flavor and it's a great change from the mushroom smothered chicken I seem to always be making. I served it corn as a side (yum)!! |
