1. Turn on the oven to 400. Grease the baking pan with a little shortening. Save until Step 5.
2. On the cutting board use the sharp knife to cut each chicken breast half into 6 strips. Save until Step 4.
3. Put crackers in the plastic bag. Seal or tie plastic bag closed. Use the rolling pin to crush the crackers. Pour the crushed crackers into the pie plate. Add bread crumbs. Stir with a wooden spoon until mixed. (Or, leave cracker crumbs in bag. Add bread crumbs to cracker crumbs and shake to combine.) Save until Step 5.
4. Pour buttermilk or milk into the mixing bowl. Dip each piece of chicken into the milk, turning to coat completely.
5. Roll each chicken piece in crumb mixture in pie plate. (Or, if crumb mixture is in the plastic bag, drop a few strips at a time into crumbs and shake to coat.) Press crumbs onto chicken pieces so that they stick. Place coated chicken pieces in greased baking pan.
6. Put baking pan in the oven. Bake for 15 to 20 minutes or until no pink color is left in the center of the chicken and the crumb mixture is golden brown. (To check for doneness use hot pads to remove pan from oven and cut into a chicken piece with a clean knife.) Turn off oven.
