Preheat oven to 250 degrees.Spray a rack with pam and set over a baking sheet. Trim and pound steaks to specified thickness. Season each with seasoning mixture. Combine the milk, hot sauce and half and half in a bowl and dip each of the steaks in. Soak them for 20 minutes covered in the fridge., remove and season again with salt and pepper. Dip back into mixture and dredge in the seasoned flour mixture. Dip back into milk mixture and then again in the flour mixture. Set in a second sprayed baking sheet and wrap and place in fridge to firm and chill for about 1 to 2 hours. Heat oil when steaks are set and when ready slide one or two steaks in a t a time and fry until edges brown, turn and fry until second side is browned. Slip onto prepared rack and place in oven to keep warm while you fry the rest. Heat up gravy to serve over top with mashed on the side,
