Ingredients

  • 1 chicken breast (8 ounces), skinned, boned, and split into half breasts
  • 6 cups Basic Chicken Stock (or canned, if poaching)

Cooking Instructions

To cook in the microwave: Place in pie plate without stock; cover tightly with plastic wrap. Cook 2 minutes 30 seconds at full power (in high-voltage oven). Prick plastic wrap. Remove from oven. Allow to cool and use.

To poach on the stove top: Pour enough chicken stock to cover the breasts in a skillet or shallow pan large enough to hold breasts in a single layer. Bring liquid to a boil, reduce heat to a simmer, and add chicken breasts. Cook about 12 minutes, or until slightly pink inside. Remove from the heat and allow to cool in liquid. Use immediately, or refrigerate overnight in liquid.
