The sauce for this delectable dish should be made 24 hours in advance.
1. Preheat the oven to 350. Butter a baking sheet.
2. Cut the chicken breasts into long strips, about 1/4-in wide, then cut each strip into pieces 1-in long.
3. Combine the eggs and water in a shallow bowl, and mix well. In another shallow bowl, stir together the macadamia nuts and the bread crumbs. Prepare separate bowls for the clarified butter and the cornstarch.
4. Dip the chicken pieces in the coatings in this order: butter, cornstarch, egg mixture, and the nut mixture.
5. Arrange the chicken in a single layer on the prepared baking sheet, and cook for 12 to 15 minutes, or until golden brown. Serve on a tray with the Cumberland Sauce at room temperature, on the side.
