Chicken Marengo (Chicken stew)

Ingredients

  • 1 large green pepper
  • 1 large white onion
  • 1/2 lb white mushrooms sliced
  • 4 Roma Tomatoes
  • 1 can pitted black olives
  • 1 1/2 lbs deboned chicken breast
  • 1/2 cup olive oil
  • 2 1/2 tsp dried basil
  • 2 1/2 tsp dried oregano
  • 1/2 tsp ground cayenne pepper
  • 14 1/ oz canned whole tomatoes
  • 2 tsp Kosher salt
  • 3 cloves garlic minced

Cooking Instructions

Slice green pepper and onion into thin strips. Remove mushroom stems and slice mushrooms. Dice tomatoes into small cubes. Drain olives. Place all in bowl to hold. cut chicken into cubes. Heat tbsp. of butter and some olive oil in large saute pan. Cook chicken to slightly brown. When chicken is brown add vegetables and saute for a few minutes. In blender or food processor add garlic and mince. Then add can of tomatoes basil oregano olive oil cayenne and salt. Blend well. Add to pan with chicken and cook with lid on for approximately 30-45 minutes.

Serve over white rice
