Wash and clean chicken, split breast into 2 pieces. season with salt, pepper and garlic.
Heat 9 inch skillet to 400 degrees. Sear chcken on both sides, remove and put to side
Boil 4 cups of water add salt, stir in 2 cups of rice. Cook rice 6 mins then drain.In same pot add cream of chicken soup and 1 can of water. Bring to boil remove from heat.
Preheat oven to 375, combine soup and rice in a 9x12 baking dish. Place chicken into rice mixture,wrap tightly in foil and place on center rack of oven.
Bake for 45 to 1 hour or until chicken is cooked through and rice is tender. Remove, uncover and let stand for 5-10 minutes.
Serve with a vegtable for a hearty winter meal,your kids will love it
