Chicken Noodle Creole

Ingredients

  • 1 med. onion, chopped
  • 1 sm. green pepper, chopped
  • 3 T. butter
  • 3 T. flour
  • 1 1/2 t. salt
  • 1 t. paprika
  • 1 (5 1/2 oz) can boned chicken
  • 1 (11 oz) can cream of chicken soup
  • 2 (8 oz. ea.) cans tomato sauce
  • 1/4 c. water (ea. can)
  • 2 t. lemon juice
  • 2 t. horseradish
  • 1 (4 oz.) can chopped pimiento
  • 1 (3 1/2 oz.) can mushrooms
  • salt to taste
  • 1 (12 oz.) pkg noodles, cooked

Cooking Instructions

Preheat oven to 350 degrees.

Cook noodles as directed.

Meanwhile, saute onion and green pepper in oil until brown.

Add flour, salt, and paprika.

Add flaked chicken, soup, tomato sauce; rinse each can with 1/4 c. water each and add.

Mix together, bring to a boil.

Stir in lemon juice, horseradish, pimiento, mushrooms, and salt.

Combine with noodles.

Pour into a 3-qt. casserole.

Sprinkle with grated cheese, if desired.

Bake, uncovered, at 350 for 30 min.

Recipe Notes

I also keep cream soups on hand to as sauces in recipes. (Mushroom, celery, chicken, etc.)
