Ingredients

  • 2 whole chicken breasts, split, boned, and skinned
  • 3 tbsp flour
  • 1/2 tsp salt
  • 1/4 tsp freshly ground black pepper
  • 2 tbsp olive oil
  • 2 cloves garlic, coarsely chopped
  • 1 cup prepared spaghetti sauce
  • 1 tbsp chopped fresh basil leaves or 1 tsp dried basil
  • 1/4 - 1/2 tsp red pepper flakes, as desired
  • 1/2 cup shredded mozzarella cheese
  • 2 tbsp freshly grated parmesan cheese, preferably parmesano-reggiano

Cooking Instructions

Pound chicken to 1/2-inch thickness. Combine flour, salt, and pepper in a paper or plastic bag, place chicken in bag and shake to coat with flour mixture. Heat oil in a large skillet over medium-high heat. Add chicken and garlic and cook 3 minutes per side. Reduce heat to medium. Combine spaghetti sauce, basil, and pepper flakes and pour over chicken. Sprinkle with mozzarella and Parmesan cheeses; cover and cook until chicken is cooked through and cheese has melted, 3 to 4 minutes.
