Ingredients

  • 1 medium-large onion, chopped
  • 2 medium carrots, peeled and cut crosswise 1/4 inch thick
  • 2 small celery ribs, cut crosswise 1/4 inch thick
  • 1/2 lb mushrooms (domestic or wild), thinly sliced
  • Salt
  • Ground black pepper
  • 4 tbsp butter
  • 1/2 cup all-purpose flour
  • 1-1/2 cups milk
  • 1/2 tsp dried thyme leaves
  • 3 tbsp dry sherry
  • 3/4 cup frozen green peas, thawed
  • 3 tbsp minced fresh parsley leaves
  • 2-1/2 tbsp vegetable oil
  • 2 cups homemade chicken broth or 1 can (16 ounces) low-sodium chicken broth
  • 1-1/2 lbs boneless, skinless chicken breasts and/or thighs

Cooking Instructions

1. Follow steps 1 and 2 of recipe for Simple Chicken Pot Pie .

2. After sauteing onion, celery and carrots in 1-1/2 tablespoons oil in step 3, remove from pot. Saute mushrooms in remaining 1 tbsp oil until liquid evaporates and mushrooms start to soften, 3 to 5 minutes. Continue as directed.
