Cook capellini according to package directions; drain and keep warm on a serving platter. While capellini is cooking, sprinkle chicken with salt and pepper to taste. Heat oil in a large skillet. Add chicken and garlic and cook over medium-high heat for 2 minutes. Reduce heat to medium. Turn chicken over and add tomatoes. Thinly slice the white portion of leek and add to skillet. Drain and coarsely chop red peppers and add to skillet. Stir in tomato paste and thyme. Cover and simmer until chicken is cooked through, about 8 minutes. Place chicken on capellini. Cook and stir sauce for 1 minute. Pour over chicken and capellini.
