Chicken Sausage Pepper and Onion Heros

Ingredients

  • 1 Tbsp oil
  • 1 pkg (about 3 oz) chicken sausages
  • 1 each red and green pepper, cut in narrow strips
  • 1 medium onion
  • 4 hero rolls

Cooking Instructions

Heat oil in a large nonstick skillet over medium-high heat. Arrange sausages on one side of pan, cover and cook 4 minutes. Add peppers to other side of pan and cook 2 minutes.

Meanwhile, cut onion in half lengthwise, then lengthwise in thin strips; add to peppers. Turn sausages. Cook all 6 minutes, stirring occasionally, until sausages are lightly charred and cooked through, and peppers and onion are lightly browned and tender.

Put a sausage on each roll; top with peppers and onion.
