Cut chicken breasts into small bite-sized cubes
Place them in large skillet with 1 tbsp olive oil
Season with Italian Seasoning and salt and cook over medium heat until there is no more pink
Dice tomatoes
Add fresh spinach to the chicken, stir and then cover for 3 minutes.
Remove lid and continue to stir until spinach has shrunken down.
Add tomatoes, stir, replace lid, and reduce heat.
Let it cook another 4-5 minutes and stir in the red wine right before serving.
Serve with a pasta with a light olive-oil base. I recommend Lemon Herb Bowtie Pasta. Or serve over white rice.
