Ingredients

  • 1 tbsp salted butter
  • 1 lb chicken tenders
  • 2 medium garlic cloves, minced
  • 1.5 cups rice, brown, whole grain, instant
  • 14.5 oz chicken broth
  • 1 tbsp fresh lemon juice
  • 2 tsp fresh lemon peel, grated or minced
  • 2 cups fresh baby spinach

Cooking Instructions

1 In a large skillet, melt the butter over medium heat, then add the chicken and garlic. Cook until the chicken is golden brown; set aside on a plate and keep warm.

2 Add the rest of the ingredients except the spinach to the skillet and bring to a boil over high heat. Cover and reduce heat to low and cook until the juice is absorbed (usually about 10 minutes).

3 Add the spinach to the skillet and mix. Serve on a plate topped with the chicken.

I'm sorry, but you DON'T give a recipe a "low" rating if you HAVE NEVER EVEN MADE IT!!! Come on - get REAL!

The Lemon and the garlic don't work

The lemon and the garlic clashed if you ask me. Also I needed more stock than 14.5 ounces to cook the rice. I used 3 cups of stock to get the rice tender (24 ounces). Otherwise it was pretty good. I'm gonna make some changes next time like adding the spices at the end so that the flavor of the lemon doesn't get reduced due to the heat.

A pound of chicken?

This looks great to me, but my husband doesn't like spinach. I may just make it for myself. Does a lb of chicken feed 4 people? I'm not sure, but I think so.

How much is a serving?

I love the recipes in this site, and the nutritional values are a must. But saying "per serving" means nothing if you don't know how much equals one serving.

Really simple and tastes great

I love a one-skillet meal! This was great. My husband had a hard time eating the spinach, but my daughter and I loved it. I used a chicken-seasoned rice mix, and I think that it added to the dish. This is perfect for a busy weekday meal.
