Chicken with Cherry-Tomato Salsa

Ingredients

  • 1 pt cherry tomatoes, halved (quartered, if large)
  • 1 ripe avocado, peeled, seeded and diced
  • 1 can (8 oz) corn, rinsed
  • 1/2 cup each sliced scallions and chopped cilantro
  • 2 Tbsp fresh lime juice
  • 2 tsp minced garlic
  • 1/2 tsp salt
  • 2 Tbsp flour
  • 1/2 tsp ground cumin
  • 1/4 tsp salt
  • 4 large skinned, boned chicken thighs (about 1 1/4 lb), visible fat cut off
  • 2 tsp oil, preferably canola

Cooking Instructions

Mix Salsa ingredients in a medium bowl. Let stand at room temperature while chicken cooks.

Mix flour, cumin and salt in a plastic food bag. Add chicken, close bag and shake to coat evenly.

Heat oil in a large nonstick skillet over medium to medium-high heat. Add chicken and cook, turning over once, 7 minutes or until golden and cooked through. Remove to serving plate. Spoon on salsa.
