Chicken with white wine and cognac

Ingredients

  • 4 Skinless chicken breasts
  • 2 oz Shallots
  • 3 oz Butter
  • 3 oz Olive oil
  • 4 oz Cognac
  • 12 oz white wine
  • 12 oz White Mushroom's
  • 4 oz Heavy Whipping Cream

Cooking Instructions

Filet Checken breasts Flour the chicken and season with salt and pepper

Chop shallots and add to skillet with oil and butter and let saute for several minutes

Add chicken breasts cooking on medium heat for 5-6 min. then turn over.

Cook 2-3 min and add cognac and white wine. Saute 2 min.

Add sliced Mushrooms and saute until chicken is done.

Place chicken in warm oven.

Turn up heat and reduce sauce

Reduce heat to low and add whipping cream, simmer for 5 min or until sauce has thickened. Ready to serve

This is a wonderful dish and my personal favorite. As classic a French dish as you will find.
