Chilaquiles Casserole

Ingredients

  • 1 tablespoon canola oil
  • 1 medium onion
  • 1 medium zucchini
  • 1 19-ounce can black beans
  • 1 14-ounce can diced tomatoes
  • 1 1/2 cups corn
  • 1 teaspoon ground cumin
  • 1/2 teaspoon salt
  • 12 corn tortillas, quartered
  • 1 19-ounce can mild red or green enchilada sauce
  • 1 1/4 cups shredded reduced-fat Cheddar cheese

Cooking Instructions

1. Preheat oven to 400°F. Lightly coat a 9-by-13-inch baking dish with cooking spray.

2. Heat oil in a large nonstick skillet over medium-high heat. Add onion and cook, stirring often, until starting to brown, about 5 minutes. Stir in zucchini, beans, tomatoes, corn, cumin and salt and cook, stirring occasionally, until the vegetables are heated through, about 3 minutes.

3. Scatter half the tortilla pieces in the baking dish. Top with about half the vegetable mixture, about half the enchilada sauce and half the cheese. Repeat with one more layer of tortillas, vegetables, sauce and cheese. Cover with foil.

4. Bake the casserole for 15 minutes. Remove the foil and continue baking until the casserole is bubbling around the edges and the cheese is melted, about 10 minutes more.

CAgui007 Help us with a REAL Chiaquiles recipe!

Still out there? Love ordering chilaquiles in Mexico but haven't found a recipe here that tastes anything like the REAL thing. Please print yours for all of us gringas. Soaking in ancho chili needs detailed instructions for the same reason. My husband would be thriled if I could make this. Me, too, by the way!

Excellent!

This was an excellent meal. I served this with some grilled chicken breasts and it was delicious. We used whole wheat tortillas instead of corn tortillas. When I make it again, I will leave the cheese out as it didn't really add to the dish but for calories. I might add some green chiles next time too. I'll definately be making this again.

We added green chilies and jalepenos and it was delightful! My son also added some red pepper flakes! Would make it again!!

Good Meal***

What is everyone talking about....there is no mention of 'shrimp' in this recipe. It says 'corn tortillas'. This is a great recipe. Take the time to read it.

Nice veggie dinner

Why would someone ruin a perfectly good meal by adding some dead cow??! (as stated by apriella77). Save a life and eat more beans!!!!!!

    Our enchilada-style casserole is made with mildly spicy sauce but you can use medium or hot. If you want to eliminate the heat altogether, try a green enchilada sauce (milder than red) or substitute two 8-ounce cans of plain tomato sauce.
